Sesame Crusted Yellowtail

Flour for dredging

egg wash - 2 eggs, 1 cup whole milk, 1/4 cup water, whisk well Sesame see flour mix - 1/2 cup flour, 2 Tbsp black sesame seeds, 2 Tbsp white sesame seeds - mix well

1 Tbsp sesame oil

1 Tbsp canola oil

2 cloves chopped garlic

2 tsp. chopped fresh ginger

8 shiitake mushroom caps, sliced thin (or more if you prefer)

2 Tbsp white wine

1/4 cup chicken stock

1 Tbsp soy sauce

1 tsp honey

1/4 cup scallions sliced

2 tsp unsalted butter

Preheat oven to 400 degrees.

Dredge fish in plain flour, shake off excess.

Dip in egg wash and then dredge in sesame flour.

Add oils to medium hot skillet. Cook fillet until lightly brown on both sides.

Place in oven for 10-15 minutes to finish cooking.

While fish is cooking in the oven, prepare sauce in the same skillet, adding more oil if needed.

Sauté garlic, ginger and shiitake mushrooms.

Add wine, stock, soy sauce, and honey. Reduce by about 1/2 until it starts to thicken.

Add scallions and finish by swirling in butter off the heat.

Spoon over fillet and enjoy!


Asian Albacore Patties

1 1/2 lbs. fresh albacore

2 Tbsp soy sauce

2 Tbsp fresh lime juice4 tsp finely minced ginger

2 Tbsp olive oil

2 Tbsp sesame oil

2/3 cup finely minced green bell pepper

2/3 cup finely minced red bell pepper

2 finely minced jalapeño peppers

2/3 cup finely minced red onion

2/3 cup finely minced celery

1/3 cup finely minced cilantro

4 large garlic cloves finely minced

1 1/2 cups Panko bread crumbs

1 large egg

Canola oil for frying

Coating Mixture: 1 1/2 cups Panko, 1 cup sesame seeds mixed well

Directions: Combine soy sauce and lime juice with ginger and set aside.

In large sauté pan over medium-low heat combine oils. When hot add peppers, onions, celery, cilantro and garlic. Stirring frequently sauté veggies until tender. Do not brown them. Add soy mixture just before completion.

Remove from heat and place in large mixing bowl and let cool. When cool add bread crumbs (1 1/2 cups), egg and fish. Mix thoroughly with your hands. Cover and refrigerate for at least 1 hour.

Making the cakes: Place coating mixture on a plate. With a little canola oil on your hands, make a patty about 1/3 cup in size and then place it

on the plate and press coating mixture to both sides. The crumbs and

oil will prevent the fish from sticking. Place formed patties on sheet pan.

Cover bottom of a large sauté pan with a light coat of canola oil and place over medium heat. When pan is hot sauté cakes until golden brown on both sides. About 3 minutes or so per side. Do not exceed medium heat setting.

Serve with rice and steamed veggies.

albacore fillets (4-6)

Cardini's Caesar dressing

4 oz. pepper jack cheese,

shredded

1 cup crushed Frito chips

Preheat oven to 350 degrees. Coat the fish with the dressing and let it sit for a half hour or so in the refrigerator. Mix up the cheese and Fritos. Spray the baking dish with Pam and place the fish side by side in the pan and cover the fish completely with the cheese mixture. Press on to the fish. This will be a nice crisp crust when done. Bake for 30 minutes or until done. Time will depend on how thick you cut your fish fillets.
